The ingredient list for these scones may not be what you'd expect, but the result is still a deliciously soft and crumbly teatime treat. They are vegan and refined sugar free, but it doesn't feel like you are missing out on anything - no tea party will be complete without them!
Makes 12
Ingredients;
450g plain flour
2 tsp baking powder
100g ground almonds
1/2 tsp ground cinnamon
80g sunflower oil
200g raisins and sultanas mix
2 bananas, mashed
100g plant based milk
1 tsp oil & 1 tsp milk combined for glazing
Method;
Preheat the oven to 220 degrees Celcuis, and line 2 baking trays.
In a bowl, mix together the flour, baking powder, almonds and cinnamon.
Add the oil, and mix well with a spoon to form a fine, clump free mix. Add the raisins and sultanas and mix through.
Add the bananas and milk, and very gently combine to form a soft dough.
Using your hands, take spoonfuls of the dough and roll into balls, place on the baking sheet then press down. You can use a round cookie cutter to help form neat circles when you press down. Repeat with the rest of the mix, to form 12 scones.
Brush the scones with a little of the oil and milk mixture. Then bake in the oven for 15 minutes, until golden.
Best served warm with a fruity compote.
